A simple and healthy tomato soup made using cheeky red tomatoes, roasted garlic, and fresh herbs. This recipe delivers a rich flavor without using flour or vinegar.
Most of the time in my house, I use it with my dinner, and my family members, especially my mother and sister, like it so much. On the weekend, I really love and enjoy it with my friends, who always feel proud of my cooking when they eat this.

  • Blender To blend the roasted ingredients into a smooth paste.
  • Strainer To ensure a smooth texture by removing unground bits.
  • Pot For cooking the strained tomato puree.
  • Oven Preheated to 220°C (430°F) for roasting.

Ingredients
  

  • 6 Red Tomatoes Cheeky red tomatoes, halved (with "eyes" removed)
  • 10-12 Whole garlic pods
  • 8-10 Fresh coriander stalks Fresh and green
  • Salt Sprinakle some salth on the tomatoes
  • 1/2 tbsp Black pepper According to your taste. If you want more spices than you and add.
  • 1-2 Bay leaves
  • Mixed herbs A little bit
  • 4 tbsp Olive oil Pour some olive oil on top of the tomatoes
  • Water or vegetable stock (optional for a lighter version)
  • Butter or fresh cream (optional for a creamier texture)

Instructions
 

  • Prepare the Tomatoes
    Cut the tomatoes in half and remove the "eyes" (stem ends).Place the halved tomatoes on a tray with whole garlic pods and fresh coriander stalks.
  • Season the Ingredients
    Sprinkle a little salt, black pepper, and mixed herbs on top.Drizzle olive oil generously over the tomatoes and other ingredients.
  • Roast the Tomatoes
    Preheat the oven to 220°C (430°F).Roast the tomatoes for roughly 15 minutes, or until they are well-cooked and slightly charred.
  • Blend the Roasted Ingredients
    Transfer the roasted tomatoes, garlic, and herbs directly into a blender.Blend into a smooth paste to retain the rich flavor.
  • Strain for a Smooth Texture
    Pass the blended mixture through a strainer to remove any unground bits like bay leaf pieces or pepper.
  • Cook the Soup
    Pour the strained tomato puree into a pot and cook for a few minutes to adjust the seasoning and thickness.Add water or vegetable stock for a healthier version, or butter or fresh cream for a creamier texture.
  • Finish and Serve
    Let the soup simmer, then it's ready to serve.Pour the thick tomato soup into a soup plate or bowl.Garnish with a sprig of fresh coriander and a drizzle of olive oil.
