Healthy adn delicious Egg Drop Soup
Today, I will tell you about a Chinese Egg Drop Soup recipe that I sometimes make. My younger brothers and sisters love it so much! It doesn’t require much time to prepare; anyone can make it quickly. It's delicious and healthy for the body.

1 Non-stick wok or saucepan for heating the chicken stock and cooking the soup.
1 Cutting Board for chopping the beancurd and spring onions.
1 Knife for cutting the beancurd and spring onions.
1 Whisk for whisking the egg whites.
1 Measuring cups for measuring liquids and ingredients.
1 Measuring spoons for measuring smaller quantities of ingredients like cornstarch and soy sauce.
1 Ladle for serving the soup.
1 Small bowl for mixing the cornstarch with water.
- 100 gms beancurd
- 2 eggs
- 3 cupl chicken stock
- 2 spring onions with greens
- 2 tsps cornstarch
- 1 tbsp light soy sauce
- Salt to taste
- Crushed black peppercorns to taste
Heat chicken stock in a non-stick wok.
Cut beancurd into small cubes. Halve spring onion bulbs vertically, then slice horizontally and add to the stock.
Chop the spring onion greens.
Break eggs and separate the yolks and whites into two separate bowls. For this recipe use only the whites.
Mix cornstarch with ¼ cup water in a small bowl.
Add beancurd to the wok along with light soy sauce, salt and crushed black peppercorns.
Add 2 tbsps of cornstarch mixture and mix.
Whisk the egg whites and then add to the soup in a thin stream. It will coagulate and rise to the top.
Add spring onion greens and mix. Serve piping hot.
