Ingredients

  • 1 onion, cut into small pieces
  • 1 red pepper, sliced
  • 1 green pepper, cut into small pieces
  • 2 garlic cloves (optional)
  • 1 tsp cumin seeds
  • 4-5 tomatoes, chopped
  • 3-4 eggs
  • Sea salt, to taste

For Serving:

  • Coriander leaves
  • 1 spring onion, trimmed and finely chopped
  • Crusty bread

How to Make It

Preheat the Pan

First, place the frying pan on the stove over medium heat. Add a spoonful of oil making perfect poached eggs.

Cook the Vegetables

Add the onion and mix until it is delicate. Then, add the garlic and chili, and fry for 1-2 minutes until they are soft.

Include Flavors and Tomatoes

Now, add the cumin seeds and fry for one minute. Then, add the chopped tomatoes, and cook for 15-20 minutes, adding some water as required. Keep the heat at medium.

Adjust Seasoning

Stir well until the mixture reaches your desired consistency and adjust the seasoning with sea salt.

Poach the Eggs

Make 4 wells inside the tomato mix and carefully crack an egg into each well. Cover the pan and cook for 5-6 minutes until the yolks are set to your preference.

Serve

At last, serve the dish with coriander leaves and chopped spring onion, beside crusty bread.
