Ingredients
  

  • 2 tbsp Oil For sautéing
  • 2-3 cloves Garlic Finely chopped
  • 1 tbsp Ginger Finely chopped
  • 1 tbsp Celery Finely chopped (optional, for extra flavor)
  • 1 small Onion Finely chopped
  • 1 small Carrot Finely chopped
  • 2-3 Green Beans Finely chopped
  • 1/4 small Cabbage Finely chopped
  • 4-5 Mushrooms Finely chopped
  • 1/5 Capsicum Finely chopped
  • 4 cups Vegetable Stock Freshly made
  • Salt To taste
  • 1 tbsp Soy Sauce For flavor
  • 1-2 tbsp Chili Sauce For spice
  • 1 tbsp Vinegar For tanginess
  • 1/4 tbsp White Pepper Powder For seasoning
  • A pinch of Sugar
  • 1 tbsp Cornflour Mixed with 2 tbsp cold water for thickening
  • 2-3 tbsp Green Onions Finely chopped, for garnish

Instructions
 

  • Heat Oil : Place a pan on heat and add oil. Once hot, add finely chopped garlic, ginger, and celery (optional but adds great flavor).
  • Sauté Vegetables : Add onions and sauté for half a minute until they become slightly crispy. Add carrots (since they take a bit longer to cook), followed by green beans and cabbage. Mix for half a minute without overcooking.
  • Add Mushrooms and Capsicum : Stir in mushrooms and capsicum, mixing thoroughly to coat with flavors.
  • Add Vegetable Stock : Pour in the vegetable stock. To make this, boil water with mixed vegetables for 10 minutes.
  • Season : Add salt, soy sauce, chili sauce, vinegar, white pepper powder, and a pinch of sugar. Mix well.
  • Thicken SoupIn a separate bowl, mix cornflour with cold water, then add it gradually to the soup, stirring continuously until it reaches desired thickness.
  • Garnish and ServeGarnish with chopped green onions and serve hot. Enjoy!

Notes

This hot and sour soup is loaded with fresh vegetables, making it both healthy and tasty. Customize by adding or omitting vegetables as preferred.
