Ingredients:

  • Carrots: 4 cups, peeled and grated or sliced into 1-inch matchsticks
  • Green Beans: 2 cups, trimmed and cut into 1-inch pieces
  • Cherry Tomatoes: 12, sliced in half
  • Garlic: 1 tablespoon, finely minced
  • Thai Hot Chili: 1, sliced into thin rings
  • Lime Juice: 3 tablespoons
  • Soy Sauce: 1-2 tablespoons, to taste
  • Sugar: 1 teaspoon
  • Unsalted Peanuts: 4 tablespoons, toasted

Instructions:

  1. Prepare Carrots: Peel and grate or slice into matchsticks.
  2. Prepare Green Beans: Trim and cut into 1-inch pieces.
  3. Slice Cherry Tomatoes: Cut in half.
  4. Mince Garlic: Finely mince.
  5. Slice Chili: Cut into thin rings.
  6. Mix Dressing: Combine lime juice, soy sauce, and sugar.
  7. Combine Ingredients: Mix all vegetables with the dressing.
  8. Toast Peanuts: Toast until light brown.
  9. Top with Peanuts: Sprinkle toasted peanuts over the salad.
