Delicious Smoky Bacon Corn Soup & American Cheese Biscuits for a Cozy Meal

This is one of my favorite recipes that’s delicious. Enjoy it with your family and have a great time. In this recipe, you’ll learn how to make Delicious Smoky Bacon Corn Soup & American Cheese Biscuits.

Ingredients

  • Smoky bacon
  • Onions
  • Potatoes
  • Sweet corn
  • Bay leaves
  • Leeks
  • Creamed corn
  • Chicken stock
  • Milk
  • Salt and pepper

Instructions

  1. Prepare the Bacon: Get your bacon and cut it into nice chunks. You want these pieces to be bite-sized, smoky, and delicious.
  2. Chop the Vegetables: Potatoes give this soup its starch and thickness, while sweet corn adds a glossy, delicious flavor. Slice and dice the potatoes nice and chunky. Don\’t forget the leeks: open them up into quarters, give them a wash, and slice.
  3.  Sweat the Vegetables
    start sweating down the leeks now add a pinch of salt. Sweat the potatoes as well to implant them with the smoky bacon flavor.
  4. Add the Corn and Stock:
    Now add the creamed and sweet corn when the leeks are sweated off. Now pour in sufficient stock to cover the fixings. You will be able to include more if needed. Now add a touch of milk to give a bright color.
  5. SimmerHold up until the soup bubbles, then reduce the heat and let it simmer for 12 to 15 minutes. The starch from the potatoes will thicken the soup, and the bacon will render, creating a rich, hearty broth.

 

American Cheese Biscuits (Scones)

Now, let\’s make some delicious American Cheese Biscuits (known as scones in the UK) to go with our soup.

How to Make It?

Step 1

Take a bowl and pour in plain flour and baking powder. Now add salt, pepper, and grated mature cheddar cheese. Mix well.

Step 2

Make a well in the center and pour in double cream. Mix with a wooden spoon until combined.

Step 3

Turn the batter onto a floured surface and knead for several seconds. Roll out to about 2 cm thick and cut into 4 cm circular rolls.

Step 4

Now place the biscuits on a lined baking sheet and let them rest for 10 minutes. Brush with softened butter, and bake for about 30 minutes at 160°C (320°F) in a preheated oven.

Step 5

You can serve hot or cold and enjoy these delicious biscuits with your soup.
