Welcome to today’s delicious recipe! I’m excited to share with you a Beef Tallow Soup inspired by classic French cooking techniques. Let’s see into how you can make this rich and flavorful soup at home!
Start by putting the beef into a large pot with cold water and a pinch of salt. Place it over a good fire and let it boil slowly but constantly. Skim off any fat that rises to the top.
Once no more fat rises, add carrots, turnips, leeks, celery, and parsley, all cut into small pieces. For an extra boost of flavor, you can also add a laurel leaf, 2-3 peach leaves, a few cloves, and a large burnt onion to deepen the color of the soup.
Grate a large red carrot and stew it over the top. Let the soup continue to boil gently until dinner time.
Toast some bread and cut it into small squares. Place the toasted bread in the tureen. Pour the soup over the bread, making sure to strain it through a sieve for a smooth texture. If you prefer, you can serve the soup with the vegetables for added texture.
For a richer soup, add the remains of a piece of cold roast beef. After straining out the vegetables, add some vermicelli (2 ounces per quart) and boil for an additional 10 minutes.
