Lobster Soup Recipe


Ingredients:

  • 1 large lobster
  • Butter (for frying)
  • Thin slices of bread
  • Butter (for the stewpan)
  • 1 quart boiling milk
  • Salt, mace, and nutmeg (to taste)

 

Instructions:

Extract Lobster Meat:
Boil a large lobster and extract all the meat from the shell.

Prepare Bread and Lobster Paste:
Fry thin slices of bread in butter. In a marble mortar, layer the bread and lobster meat alternately, then pound to a paste.

Cook the Soup:
Melt some butter in a stewpan. Add the bread and lobster paste. Gradually stir in 1 quart of boiling milk. Season with salt, mace, and nutmeg to taste. Let the mixture stew gently for 30 minutes.

Serve:
Serve the soup hot, garnished with a sprinkle of fresh herbs or a dash of additional nutmeg if desired.
