Instructions:

Preparing the Spam and Pineapple

Now some of you know that pineapple does irritate me, but these pineapples are incredible. They\’re super sweet and not sour, and the combination between the fat and the sweetness from the pineapple is second to none.

  1. Slice the Spam: Slice your spam into nice long chunks, not too thin because I want them to go really nice and dark on the grill.
  2. Teriyaki Glaze: Here I\’ve got a little bit of teriyaki sauce glaze, and I\’m just going to put some glaze on the plate and just sit the spam inside that glaze. That\’s going to give it a really nice sweet texture. Let that sit there, get your brush, and just brush that teriyaki glaze on the spam.

Making the Miso Mayonnaise

Next, we\’re going to make some miso mayonnaise:

  • Mix a tablespoon of mayonnaise with a little teaspoon of teriyaki glaze and a teaspoon of miso paste. Mix that up until you get a beautiful, smooth mixture.

Grilling

  1. Grill the Spam and Pineapple: Let\’s get the spam and the pineapple onto the grill now. Pineapple slice down a little thinner than the spam. These pineapples are delicious, I\’m telling you. Over to the grill we\’ll go: pineapple and spam. I can\’t wait to show my mom this one. Pineapple goes on that so beautiful, oh my Lord. And now with my spam, beautiful grilling spam, honestly it\’s beautiful just that\’s where that glaze is over there and let that grill beautifully.
  2. Fresno Chili: Now I want a little bit of heat on there, I just want a little touch of Fresno chili. Just slice them in half, take the seeds out, and slice them in half. Get rid of those seeds, just rub a little bit of oil in there, some Hawaiian salt, and then just literally start grilling those chilies.

Preparing the Buns

Now we\’re using a Hawaiian soft roll, so just slice these in half and then take your miso mayonnaise, brush that on there. This gives a really nice flavor, those buns caramelize, you got this beautiful lovely crisp texture inside these amazing buns. Lather that mayonnaise on and wait and see what that does to the bread when it goes on the grill. We\’ve got a touch of Hawaiian salt on each top and bottom, fill up those little crevices.

Now buns go on tops go on there. I want you to push them in into the grill now and literally just lightly flatten them and they sort of crisp up nicely, that miso mayonnaise is doing its work. But squash that down, squash really important, and just get a pan and just push on top and squash that bread down so we get some really nice crispy texture on that bread.

Assembly

And look, there you go. Now look at that pineapple grilled beautifully, so sweet buns really nice and sweet Fresno chilies beautifully done, little bit of heat, little bit of bite, and the spam, come on, look at that, how elevated is that, beautiful, love it.

  1. Start the Assembly: Bread now. Now we start the assembly. Beautiful. Okay, that is our base, that is our top, that is our top and that is our base. Now bases first, get your beautiful onions that been grilled in that miso mayonnaise on the grill. Set that on the bottom, almost like a caramelized sweet onion, so good. A little bit of seasoning on there.
  2. Layering: So on goes the spam, spam, pineapple, pineapple, pineapple, spam, spam, pineapple, pineapple, and pineapple. From there take your Fresno, open that up, set that on top. That gives a little bit of heat to that pineapple, and then a little brush of your miso mayonnaise. I mean who would have thought the spam could be so glamorous?
  3. Final Touch: Finally hit that with some crispy shallots and crispy garlic that\’s got the crunch on top, and with that miso mayonnaise it helps stick all that crunchiness to those sandwiches.

On goes your lid, on goes your lid. Now push them down gently and then slice. Oh my goodness, look at that, come on, so beautiful and come on, that has to be one of the most glamorous Hawaiian-inspired spam sandwiches on the planet. Thank you Mom, I love you.
